Growing Herbs inside | I'm not a green thumb but have always liked to dig in the dirt (yes, even as an adult) and try growing plants and flowers. It always amazes me that you can put a seed or a stick in the ground and something beautiful appears. Since we have been experiencing the fresh ingredients from Blue Apron Foods it has inspired me to want to grow my own fresh herbs. I am thinking about trying to grown them indoors. I'm going to try mint, basil, and rosemary. I'll keep you posted. YIKES!! |

How many of you have heard of Blue Apron Foods? It is a meal delivery service that offers seasonal ingredients that are fresher than you will purchase from your local supermarket. The meals include specialty ingredients that you might not be able to find in your local supermarket and you will receive the appropriate amount, leaving no waste (since you would have to buy bulk from the supermarket). Each meal ranges between 500 - 700 calories. Oh, and I failed to mention that it is around $9.99 a meal per person. This is what we received in our first box. Our second delivery is arriving today, I'm like a little kid at Christmas. But here is the best part......the grocery shopping is done and put up in minutes. Smiling!!!! Turkey Kibbeh with Cucumber Salad & Mint-Yogurt Sauce I was really worried about this dish because it had some ingredients that I had never heard of, much less cooked with, before. But this picture is my final plating and it was really flavorful. I would definitely enjoy it again. Flat Iron Steaks with Ramps, Fingerling Potatoes& Asparagus Salad This was our favorite meal out of the three. It was satisfying, and comforting. Loved the Creme Fraiche sauce served on the side. It was a great accompaniment with the steak, which if I don't say so myself, that was cooked to perfection! Rice Flake - Crusted Hake with Sauteed Daikon Radish & Yuzu-Soy Sauce This dish was the most challenging for me. I think it was only because the fish stuck a little in the pan. We had not had this type of fish or the radish or the Yu Choy before. It was a good meal and only 500 calories. Well, as many of you know, we were hit with a huge ice storm in middle Tennessee. We were unable to get out of our driveway and it was unsafe to do so. Wayne and I thought it was the perfect time to have a Chicago Fire Marathon of our own and I made homemade vegetable soup with whatever I found in the kitchen. YIKES, right?? Well here it is: Stir Crazy Vegetable Soup 3 Carrots 3 Stalks of Celery 1/2 Sweet Onion 2 Cloves of Garlic 2 - 3 small potatoes (I used Yukon Gold) 1 C frozen corn 1 C frozen peas 1 C Bow Tie Pasta 2 15 oz cans Diced Tomatoes (undrained) 32 oz of soup stock (I used beef stock. You can use vegetable or chicken stock as well) Salt and Pepper to taste 1 Tlbs EVOO 1 Tlbs Butter 2 Bay Leaves Chop your carrots, celery, onion, and potatoes (all the same size so they cook evenly), and mince your garlic. Saute the onion in the oil and butter for about 5 minutes and add the carrots, celery and potatoes. Sprinkle with salt and pepper and continue to saute another 10 minutes. Stir in minced garlic and saute another 5 minutes or so. Now, add the tomatoes, soup stock, and bay leaves. (add more salt and pepper, I always add salt and pepper after each ingredient addition). Bring to a boil and simmer on medium to medium low for 30 minutes. At this point you could add a pasta of your choice and simmer for another 30 minutes. Serve with Saltines and butter for a little comfort. Hope you enjoy! I am going to the Schermerhorn Symphony Center in Nashville, TN this weekend. I find myself pondering this question. "Is there anyone out there that practices driving etiquette?" The reason for this pondering moment is this....I was at the bank yesterday, backing out of my parking spot. I was half way backed out when I noticed another vehicle pulling in the ban. They clearly see me, because they had to drive around me to get to another spot. Unbelievable!! Check out this for driving etiquette.
