Parmesan Crusted Chicken
(2) Chicken Breast - Filet them in half
1/4 C. Parmesan Cheese
1/2 C. Hidden Valley Creamy Parmesan Dressing
1 C. Bread Crumbs (I made homemade because I didn't have any, see recipe below)
Filet your chicken breasts in half and cut two or three slits in them for the marinade to penetrate. Place chicken, dressing, and Parmesan cheese in a bowl and mix together. Set aside while you prepare your breadcrumbs, because, like me, you didn't have any store bought. Place your wonderful breadcrumbs in a dish and coat your chicken pieces one at a time and place them on a baking sheet. Bake in a 400 degree oven for approximately 20 minutes. Let chicken rest for 5 minutes before serving.
Bread Crumbs
2 - 3 slices of bread
1/4 C. Parmesan cheese
1 tsp. garlic powder
2 pinches of salt
3 grinds of pepper
To make your breadcrumbs, place three to four slices of bread on a baking sheet and place in a 200 degree oven for about 5 minutes on each side. Add your bread, Parmesan cheese, salt, pepper and garlic powder in food processor or blender and pulse until combined.
